Spinach and mushroom omelette

SPINACH AND MUSHROOM OMELETTE




Ingredients:

Eggs- 2
Spinach- 2 cups loosely packed
Mushrooms- 4 sliced or finely chopped
Cheese- Pepper jack or feta- to taste
Salt and pepper to taste
Milk- 2 tsp
Butter or olive oil- 1 tsp

Method:

  • Beat eggs with salt and pepper. Add milk. Mix well.
  • Microwave spinach in a bowl of water till cooked. Drain water and chop it finely.
  • Heat butter or olive oil in a shallow pan. 
  • Spread the eggs around the circumference of the pan. 
  • Allow to semi set.
  • Then add the spinach, mushrooms and top with feta or pepper jack cheese in one half of the egg layer
  • Flip the other half of the egg on top of the half which is topped with spinach, mushroom and cheese
  • Flip entire omelette over once and then serve hot.


TIP: Do not add as much as salt as you usually would, because spinach is salty by nature


MUM'S SPECIAL COFFEE


Ingredients

Milk- 3/4 cup
Water- 1/4 cup
Nescafe instant coffee- 1 tbsp
Sugar- 1 tbsp
Water- 1 tsp

Method

In a cup, mix the coffee, sugar and 1 tsp water  and beat with a spoon till the color of the coffee turns light brown.
In a pan, mix the water and milk and bring to a boil.
Pour this milk and water mixure on top of the coffee mixture ( in the cup).
Aerate this by transferring the coffee from the cup to the pan for a couple of times.

TIP: Serves one. Sprinkle with some coffee powder for effect and aroma.

  4. Thanks! I wish I could take credit for it:) the magic ingredient was Coffee Day coffee powder from India! I have see it here in an Indian store (Coffee day brand), never tried it though.

    I used Espresso Maker to make coffee decoction. I find the coffee decoction made by the regular coffee maker(which uses paper filter) little watery.. you could heat up milk either in microwave or on stove top, but making coffee on stove top gives it an added flavor.. then add sugar and later I frothed it up with the frothing gadget I had, in India this process is usually done by transferring milk from one tumbler to another. Then add the hot decoction as per your taste. If you reheat the coffee after this point it'll lose its flavor a bit.
