Kadhai Chicken




Ingredients

Chicken with bones - 800 gms
Onion- 1/2
Garlic- 5 cloves or 1 tsp paste
Ginger- 1" piece or 1 tsp paste
2-3 Green chillies
4 tbsp thick yogurt
2 tbsp vinegar or lemon juice
2 tsp red chilli powder
1 tsp coriander powder
1 tsp garam masala powder
1 1/2 tsp salt
Few drops of Orange color ( Optional)
Oil- 1 tbsp

Method

Grind the onion, ginger, garlic and green chillies together in a mixer. In a bowl mix this paste with yogurt, vinegar or lemon juice and the rest of the spices listed above. Make deep gashes in the chicken and rub this paste all over the chicken . Marinate for 2-4 hours. Heat oil in a kadhai and put the chicken along with the marinade in it. Cook on high heat for 5 minutes and then cover and cook for approximately half an hour until done. The chicken should be dry with slight gravy covering it.

TIP: It is important in this recipe to first let the chicken cook on high heat for 5 minutes without covering. That allows the juices of the meat to seal in, which makes the chicken more delicious!!

  2. It's a good idea to get your chicken pre cut and cleaned( with the skin removed)from the butcher store . For this recipe, i get 1 whole chicken cut in 16 pieces.

    I learnt about this blog from FB, was waiting to try it out for a long time now, tried it today, yeah with a guy mods for sure, more yogurt than needed, marinated it for 1 and a half hour, with double the vinegar.
    Well, it turned out be the way it looks like in the snap, though it is a bit more sour than what it is supposed to be, but my bros loved it as its was really very diff from what I usually serve, my hyper masala fare
