Kheer is a sweetened Indian rice pudding. There are many a different ways to make kheer. Some people like to cook it on slow fire ( for a long period of time). The use of pressure cookers reduces the time taken to make this dish drastically. The aim is to evaporate the milk and make it off a thicker consistency ( pudding like). You could reduce the amount of milkmaid if you prefer it less sweet.
Ingredients:
Rice- 100 gms
Milk- 1 Litre
Sweetened condensed milk or milkmaid- 1 tin
Chopped nuts/ Cardamom powder- optional
Method:
- Wash rice and pressure cook in milk for 10 minutes ( or cook on slow fire till the rice is soft)
- Add milkmaid and cook for another 5-7 minutes stirring constantly until the kheer reaches the consistency you like the best.
- Remove from fire.
- Serve garnished with nuts/ cardamom powder.
