Puris- Fried Puffed Unleavened Bread

Ingredients:


Wheat Flour- 1 1/2 cups
Salt- 1/2 tsp
Carom seeds ( Ajwain)- 1/2 tsp
Oil- 1 tsp
Water- 2/3 cup + 1 tsp
Oil- for frying- 21/2 cups


Method :

  • Sift together flour, salt and carom seeds into a bowl. Add oil. Mix with your fingers. 
  • Gradually add water, making and gathering all the flour to make a firm ball.
  • Knead till dough is soft and elastic ( approximately 2 minutes). Keep covered for 1/2 hour.
  • Knead dough briefly. Make 25 balls. 
  • Roll a ball of dough into a flat round 8 cm in diameter. Roll out remaining balls in the same way.
  • Heat oil in a deep- fry pan on high heat for about 5 minutes. Add the puri in the oil. Push down slightly with back of a perforated spoon.
  • Puris should puff up in a few seconds. Turn over and fry on both sides till golden brown.Remove and drain.
  • Fry remaining rounds in the same way.
  • Serve hot.
