Vegetable Pulao- Serves 4

Every family has a dish that they remember as something that was usually made as a "we are back home from holidays dish." In my mum's house, it was Vegetable Pulao. Apart from being healthy because of the  various vegetables in it, this is a meal in itself. I remember having it with yellow moong daal or yogurt, whichever was available at that time.
Recently, i got back from a holiday with my family ( and that being the reason they were no posts the past 10 days!!) and thought let me refresh my memories of mum's veg pulao. If you are feeling generous, the best way to enjoy this is warm and with lots of butter :-)

Ingredients:

Rice- 1 cup- soaked for 1/2 hour in water
Chopped Mixed vegetables of your choice- 1/2 cup
You can use a mixture of cauliflower, carrots,beans, peas , potato and tomato
Onion- 1/4 sliced

Salt - to taste- approximately 1 tsp
Oil- 1 tbsp
Water- 2 cups



Sabat masala which consists of:
Cumin seeds-1 tsp
Cinnamon Stick- 1
Green Cardamom- 2-3
Black peppercorn - 5-6

Method:

  • Heat oil in a pan and add the sabat masala. When it splutters , add the sliced onions and brown them.
  • Add the mixed vegetables and stir fry for 2 minutes. Add salt and water . Let it boil.
  • Then add the rice and the let another boil come . Reduce heat and cook until done.
  • Serve hot decorated with fried cashews and raisins and fried onions.
