Cream of Tomato Soup


Ingredients:


Tomatoes- 1/2 kg
Water- 500 ml
Onion- 1- finely chopped
Garlic- 2 cloves- chopped
Cloves- 2
Cinnamon- 1" stick
Salt - to taste
Sugar- 1 tsp
White pepper powder- 1/2 tsp
Cornflour- 1 tsp
Milk- 1/3 cup
Butter- 1tbsp
Whipped cream and bread croutons to serve


Method:


  • Pressure cook tomatoes, cinnamon stick and cloves along with water and then sieve it through a fine sieve.
  • Saute onion and garlic in 1 tbsp butter and liquidize in a mixer along with the sieved tomatoes.
  • Take this liquid and place in a pan. Boil and then add sugar, salt and pepper.
  • Dissolve cornflour in milk and add to the soup so that it thickens a little.Keep stirring
  • Serve the soup with a swirl of fresh cream and bread croutons.
