Bhatura

Bhatura is an Indian bread made of refined flour






Ingredients

Maida- 1 1/2 cup
Sooji- 1/2 cup
Lukewarm Water-1 cup
Instant active dry yeast- 1 packet- 7 or 10 gms
Salt- 1 tsp
Sugar-1 tsp
Oil- 2 tsp
Oil- for deep frying

Method
Mix all the above ingredients except the water and yeast in a bowl. In  a separate bowl, take  the lukewarm water ( neither hot nor cold) and add the yeast. Keep aside for 5 minutes. Now mix the yeast and water  with the rest of the ingredients. Knead it into a dough.  Cover with warm and wet cloth( which has been washed in warm water and then rinsed out )and keep it for 1 1/2 hours.This process will increase the volume of the original dough to almost double.
Punch down and knead again. Divide the dough into 8-10 portions and roll  each portion with the hands to form a ball shape. Keep for another 10-15 minutes covered with the cloth.
Taking one portion of the dough, roll it with the rolling pin into an elongated shape and flatten with the palm of the hand. Deep fry in medium hot oil on both sides till light golden brown in color.
Makes 8-10 bhaturas.

I am vouching for this one.....I learnt it from you and now my mom & MIL have ditched their recipes to follow Aunty's....cause it takes away the heartache cause by the art of fermentation - which is very hard to master :). Don't get me wrong both moms are gifted cooks but they just loved how easy and light these Bhatura's are!!!
