Ingredients
Eggplant- 1 medium sized
Onions- Red- 3 small sized
Tomatoes- 4
Green Coriander leaves ( Fresh)- 1 cup loosely packed
Ajwain ( Carom Seeds)- 1/2 tsp
Salt - 1 tsp or to taste
Red Chilli powder- 1/2 tsp (optional)
Coriander Powder- 1 tsp
Oil - 1 tbsp
Method
Brush the eggplant with a little bit of oil on all sides and poke several times with a fork on all sides.
Broil the eggplant in the broiler for 30- 45 minutes in a broiler, turning it around once in between until the skin becomes wrinkled.
Let the eggplant cool down. Then remove the skin.
Chop the pulp of the eggplant.
Chop the onions and tomatoes into small sized pieces
Heat oil in a pan. Add the ajwain. Stir. Then add the onions and cook on medium high heat till they are pinkish brown in color. Add the tomatoes and cook for another 2 minutes. Stir in the pulp of the eggplant along with salt, coriander powder and red chilli powder. Also, add the fresh coriander leaves at this time.
Cover and cook on low heat for 5-8 minutes. Then , cook another 2-3 minutes till you see oil on the sides of the pan.
TIP: To avoid the mess , i layer the baking pan with two sheets of aluminum foil before i place the eggplant on it and in the broiler. Once the eggplant is cooked, all i have to do is toss the foil and thus i avoid the mess.

ReplyDeleteI loved the broil trick - I used to bake the eggplants for 90 mins - broil cuts cooking time into half. I also added pea's -- super easy and yum!!!
